Mom's Homemade White Bread Recipe

1/2 cup of water
2 pkg of active dry yeast
3 Tsp of sugar
1 Tsp of salt
2 Tsp of shortening
2 cups of scalded Milk
7-71/2 cups of flour

Directions:
Directions:
In a large bowl add the yeast sugar and water. Let set until yeast rises to the top. Add the scalded milk that has cooled to lukewarm, salt and shortening and stir to blend. Add two cups of flour and beat into a batter. This is a sponge, let it rest for about 15 minutes.
Add remaining flour, a cup at a time, until you have a stiff dough. Turn dough out on floured surface and knead until smooth and elastic, about 15 minutes.
Place dough in clean greased bowl and put a kitchen towel over it and place in warm area to rise. When it has risen double in bulk, punch dough down and let rise again.
Divide into two loaves and place in greased loaf pans and let rise the third time. Bake in a 350º oven for about 35 minutes or until it is golden brown and sounds hollow when tapped. Remove from oven, butter the top and turn out on a cooling rack.

This can be doubled or tripled without increasing the amount of yeast you use. Just increase everything else. Mom made bread every week. We would sometimes have homemade bread and a glass of cold milk for supper on Sunday night.
