14oz. can diced tomatoes undrained
1 c. chicken broth
1/4 c. flour
2 T. olive oil
1 lb. Polish sausage, cut into pieces
1 medium onion, diced
2 ribs of celery, chopped
1 green bell pepper, diced
1 carrot, peeled and chopped
2 tsp. dried oregano leaves
2 tsp. dried thyme leaves
1/8 tsp. ground red pepper
1 c. uncooked long grain white rice

Directions:
Combine tomatoes and broth in crock pot. Sprinkle flour over bottom of small skillet. Cook on high heat with out stirring 3-4 minutes or until flour begins to brown. Reduce heat to medium; stir flour about 4 minutes. Stir in oil until smooth. Carefully wisk flour mixture into crock pot. Add all ingredients except rice. Stir well cover and cook on low 4 1/2 - 5 hours. About 30 minutes before gumbo is ready prepare rice. Serve gumbo over rice.
