2 c. uncooked rice
1 lb. ham steak, cut into cubes
1 lb. bacon, cooked and crumbled
1 medium to large onion, sliced into thin wedges
2 eggs, beaten slightly
1 lb. box of frozen peas
2 T. peanut oil (I use olive oil)
2 T. soy sauce
1 small jar pimiento (I never use them)

Directions:
Directions:
Cook 2 cups of rice to 4 cups of boiling water, cover and simmer on low for 20 min. Heat wok (pan) with 1 Tbsp. oil and stir fry onions until slightly clear. Remove. Fry eggs 1/3 at a time, pour in and flip over and remove. Cut into squares. Add 1 Tbsp. oil and soy sauce to cooked rice mix. Add remaining ingredients. Heat until peas are warm through.
