3 Tsp of water
1 tsp of salt
2 cups of flour

Directions:
Directions:
Pour flour into a large bowl. Make a hole in the middle of the flour and place the eggs and water in the hole. Add the salt and with a fork start to beat the eggs lightly in the hole you made in the flour. You should start to pick up a little flour at a time until you have a dough. Knead the dough until you have a stiff dough that is no longer sticky. Add additional flour if needed. Divide into two pieces and roll out one piece at a time on a well floured surface. Roll dough as thin as you can and flour the top
let rest for 30 minutes to dry. Start at one end and roll the large round of noodle dough up like a jelly roll. On a board start at one end and cut the roll into 1/8 inch slices and as you do, pick them up and shake them though your fingers to unroll the noodles and mix them with the flour on the board. Once all of the noodles are cut Add them to boiling broth a handful at a time stirring to keep them separated. ( Always make sure that your broth continues to boil) Cook in broth for about 15 20 minutes.

Oh what a grand old dish this was at our house, and you make them the same for beef and noodles as you do for chicken and noodles.
