1/2 c uncooked rice
1/2 tsp. salt
1/4 c sugar
1/4 tsp. cinnamon or nutmeg
2 1/2 c milk
1/2 c seedless raisins, if desired

Directions:
Cook covered over boiling water until rice is tender and milk is almost absorbed (1hr.), stirring frequently. Good served warm or cool.

Mom prepared rice pudding often as the family liked it. This recipe is from Betty Crocker Cook Book(1956). Mom instinctively knew how to balance the ingredients for the right pudding consistency.
