½ cup flour 4 pork tenderloin chops ½ cup chopped green onions 1 teaspoon salt 1 clove minced garlic ½ teaspoon oregano 1/8 teaspoon black pepper ½ cup cooking sherry ¼ cup water (or white wine) ½ lb. sliced mushrooms 1 tablespoon butter 1 tablespoon olive oil
Shake chops in flour and brown in butter and oil. Remove from pan. Add onions, garlic, oregano and pepper (may need to add more olive oil). Saute’ one minute. Return meat to pan and add sherry and water (or white wine) and reduce heat. Simmer 45 minutes. Add mushrooms & simmer additional 15 minutes. Serve over spaghetti noodles.
