4 to 5 c. Apple & Zucchini, chopped fine
1 1/2 c. Sugar
3/4 c. oil
2 eggs
1 tsp. Vanilla
2 c. Flour
1/2 c. Walnuts, chopped
2 tsp. cinnamon
1 tsp. Baking Soda
Lemon Zest

Directions:
Preheat oven to 350º. Combine all ingredients. Bake in a sprayed and floured bunt pan. Bake for 1 hour. Cool for 10 minutes and tip out.
