21/2 to 3lbs. beef short ribs
salt and pepper
1/4 cup flour (all- purpose)
2 tbsp. shortening
1 medium. onion sliced
1/2 cup chopped celery leaves
11/2 cup hot water or bouillon
2sprigs parsley
6 each medium carrots, potatoes
8 small onions
flour for gravy

Directions:

Cut ribs into individual servings Sprinkle with salt and pepperand roll in flour. Brown ribs in hot shortening in heavy skillet; add onions, celery leaves, parsley, and liquid. Cover skillet and cook over low heat for 2 hours, adding more liquid if necessary.
add vegetables, continue to cook about 30 minutes or until vegetables are tender. Remove meat and vegetables to hot platter. for gravy skim fat from liquid and dilute liquid to preferred strength; thicken with a smooth flour and water pastefServe oved meat and vegetables.
