3 cups fresh mixed vegetables (zucchini, yellow squash, broccoli, carrots, onions, mushrooms, peppers, tomatoes, eggplant or anything you like)
1/2 tsp. Italian herbs
Dash of pepper
2 T. butter or margarine
2 eggs
1 c. milk
1 c. flour
1/2 tsp. salt
4 oz. grated Monterey Jack cheese

Directions:
Directions:
Mix eggs, flour and salt with electric mixer while slowly adding milk. Steam or microwave veggies until partially cooked, but still "al dente". Melt butter in casserole dish or glass pie plate in oven. Pour batter into preheated dish. Add veggies in middle of batter, sprinkle with herbs, pepper and cheese. Bake at 375 for about 30 minutes.
