1/2 pound grated carrots
4 green onions, minced
2 garlic cloves, minced
7 1/2 ounces firm/extra firm tofu, well drained and diced
1 cup dry bread crumbs
1/4 cup teriyaki sauce
2 egg whites
1/8 tsp salt
1/8 tsp pepper
4 medium hambuger buns

Directions:
Directions:
Coat a large non stick skillet with cooking spray. Add carrots, green onions, and garlic and saute until tender. Add tofu and saute for another minute. Transfer to a medium sized bowl. Stir in breadcrumbs, teriyaki sauce, egg whites, salt and pepper. Shape into 4 equal sized patties, pressing firmly with your hands.
Wipe out saute pan and again spray with cooking spray. Fry patties on both sides until crips and brown (about 3 minutes per side) and serve on buns.
