4 pound pork loin, boned
4 carrots, quartered
1 clove garlic
4 small onions, peeled
1 tsp salt
1 tsp thyme
1/2 tsp pepper
1 chicken-bouillon cube
1 c boiling water
2 tbsp snipped parsley

Directions:
About 2 1/2 hours before dinner: In dutch oven, saute pork until all sides are brown. To it add carrots, garlic onions, salt, thyme and pepper. Cover and simmer, over`very low heat, for 2 hours or until pork is fork-tender. Remove pork to a heated platter. Dissolve bouillon cube in boiling water, gradually stir into gravy in Dutch oven and heat thoroughly. Then put gravy through a food mill, or mix it in an electric blender until vegetables are blended with liquid. Pour over meat; garnish with parsley.
