1 tb. veggie oil, 1 chopped onion, bell pepper and celery if desired, 3 cloves minced garlic, 2 1/2 c. water, 1 can kidney beans, rinsed and drained, 1 c. uncooked white rice, 1/4 lb. chopped bacon, 1 bay leaf, 1 tsp. dried thyme, 1/2 tsp. pepper

Heat oil over medium heat. Add onion and garlic. cook and stir 5 minutes. Add water, beans, rice, bacon, bay leaf, thyme and pepper. Cover and cook over medium heat 15-20 minutes. Remove bay leaf and serve.
