2 10 oz. cans mild enchilada sauce, 1/2 c. veggie oil, 1/2 c. all purpose flour, 1/2 tsp. garlice, dash black pepper, 1/2 tsp. ground cumin, 1 1/2 tsp. salt

In a sauce pan combine oil and flour, brown lightly. Add garlic, cumin, salt and pepper. Stir. Add encilada sauce plus 3 cans of water and bring to a boil. Lower heat and let simmer 3-5 minutes. Serve over enchiladas.

Aunt Lupe showed me how to make this a few years ago when I decided to make enchiladas. I thought it would be fun to make homemade flour tortillas. Little did I know that when I was done my kitchen would look like a bad Mexican movie! Tasted great though!!!
