1 tbsp. olive oil
2 garlic cloves, thinly sliced
1 lb. zucchini, sliced 1/4-inch thick
1/2 tsp. salt
1/2 tsp. pepper
1 large tomato, diced
1/4 c. thinly cliced fresh basil
1 c. fancy parmesan shredded cheese or shredded parmesan, mozzarella & romano cheeses (I personally prefer using the parmesan).

Heat oil in a large skillet over medium heat; cook garlic for 2 minutes, stirring frequently. Add the zucchini, salt and pepper; cook 5 minutes or until zucchini is crisp-tender, stirring frequently. Stir in tomato and basil. When plating for serving, top with cheese. This dish is best when served warm and the leftovers are great too.
