Ingredients: 1 medium sized eggplant 1 Lb of ground beef or lamb 1 large onion 3-4 cloves of garlic 1/2 tsp of cinnamon 1 cup of burgundy wine 2 small cans of tomato sauce
Cream Topping
1 cup of flour 2 Tsp of butter 1 cup of parmesan cheese 2 cups of milk 4 eggs beaten

Directions:Brown ground meat with chopped onion and garlic, drain off fat. Add the remaining ingredients for the sauce and cook on low for about 20-25 minutes. Slice eggplant into 1/4 inch slices and fry in olive oil for just about 1-2 minutes on each side drain on paper towel. In a large casserole dish or glass deep 13x9 pan, layer the eggplant with the meat sauce.
In a sauce pan melt the butter and add the flour cook for 3 minutes but do not brown. Add the milk and stir so that it does not lump. Cook until mixture thickens and then add the cheese. Remove from the heat and add the eggs. Pour this mixture over the casserole. Bake in a 350º oven for about 45 minutes or until it is brown on top and hot and bubbling around the edges |
