Hardee's Quick Cinnamon Biscuits Recipe

Ingredients: 1 c Jiffy Mix 2 Tbsp sugar 1/4 c raisins ½ c Sourdough starter plus milk as needed
Cinnamon mixture: 1/4 c sugar 1 tsp cinnamon
Icing: ½ c powdered sugar 1/4 tsp vanilla

Directions:Soak raisins for 15 minutes before use, drain. Combine ingredients; add enough milk to make of drizzling consistency (about 3/4 tsp). Combine Jiffy Mix, sugar and drained raisins. Stir well making sure raisins are coated. Add starter and enough milk to make a soft dough. (if you don’t have a starter then you can use about 1/3 c of milk). Pat dough into a ½ inch thick circle. Coat with melted butter (I cheat and melt about 1 Tbsp more butter than needed in the baking pan and then brush some of that butter on the dough). Sprinkle with cinnamon mixture. Fold and pat out again. Sprinkle with more cinnamon mixture. Use a biscuit cutter to form biscuits. Melt 1 Tbsp butter in round baking dish. Coat biscuits with melted butter as you place them in the pan. Bake in a pre-heated 450-degree oven for 17 minutes (for a crispy biscuit). Remove from oven and drizzle with icing. Serve hot. |

Notes: Our family enjoyed the Hardee’s Cinnamon Biscuits but weren’t always where we could get them so I developed this quickee biscuit recipe, which is very close to the real thing. Hardee’s, eat your heart out.
