2 large carrots shredded
1 large onion chopped
1 cup regular brown rice uncooked
2 cups chicken broth
1 tsp Italian seasoning
1 tsp pepper
3/4 cup shredded zucchini
1 lb fresh or frozen (thawed) sole or other lean fish fillets
1 medium tomato (sliced), lemon pepper, and salt

Directions:
Directions:
Preheat oven to 350 degrees. Mix onion, carrots, rice, broth, Italian seasoning, and pepper in a 1 1/2 qt. sauce pan. Heat to boiling; reduce heat, cover and simmer for about 35 minutes, stirring often, just until rice is tender. Stir in zucchini, heat to boiling, remove from heat. Spoon rice mixture into an ungreased rectangular dish. Place fish fillets in single layer on top. Sprinkle with salt and lemon pepper; cover with foil and bake 20 to 25 minutes or until fish flakes easily with a fork. Place tomato slices on fish, bake uncovered about 5 minutes or until tomatoes are heated through.
