2 lbs ground beef
2 lbs ground pork
1 medium onion, minced
2 slices soft bread, crusts removed and torn into pieces
5 cloves garlic
2 eggs
1/2 cup chopped fresh parsley
1/4 cup olive oil
1 T Italian seasoning
1 T kosher salt
1 1/2 cup freshly grated parmesan
3 tsp ground black pepper
1 1/2 cups Ricotta cheese

Preheat oven to 400º. In a large bowl, combine the first 10 ingredients, including 1 cup of parmesan and 2 tsp of black pepper. Mix just to combine. Shape the mixture into 16-18 large meatballs (about 3/4 C. each). Place on a baking pan and set aside. Combine ricotta with remaining Parmesan and pepper. Bake the meatballs for 20 minutes in upper 3rd of oven. Spoon 1 T of ricotta mixture onto each meatball. Broil for 3 to 5 minutes. Serve with your favorite marinara sauce.

This recipe takes some time but makes a lot of food. Freeze 1/2 the meatballs for a later date. Messy but worth it!
