4 flounder filets (1 1/2 to 2 lbs total)
Salt and pepper
1/4 c. mayonnaise
1/4 c. Dijon mustard
Bread crumbs

Directions:
Directions:
Preheat oven to 425º. Pat fish dry. Place in large baking dish and season with salt and pepper. Mix together mayonnaise and mustard. Spread mixture over fish filets. Sprinkle with bread crumbs. Bake until cooked through and the topping is golden, about 15 minutes.
