1&1/2 c. all-purpose flour
3 tsp. baking powder
1/2 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. freshly grated nutmeg
1 tsp. ground ginger
Pinch of salt
1/2 tsp. freshly ground black pepper
2 eggs
1/4 c. firmly packed brown sugar
8 oz. roasted pumpkin flesh, fresh or canned
1&2/3 c. milk
4 T. unsalted butter, melted and cooled
Freshly grated zest of 1 orange

Directions:
Directions:
Sift the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, salt, and pepper into a large bowl. Put the eggs, sugar, pumpkin, milk, cooled melted butter, and orange zest into a second bowl and beat it well. Gently fold in the flour mixture.
Spoon out the batter to make pancakes as you normally would, whatever size you like best. It's fun to sprinkle a few pumpkin seeds into these pancakes as well!
Serve with honey butter and powdered sugar, or with maple syrup.
