"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
2 c sugar 1/2 c light Karo 1/2 c water pinch salt 2 egg whites 1 tsp. vanilla
Boil sugar, Karo, water and salt to a soft ball. Pour approximately 1/3 over stiffly beaten egg whites and mix. Boil the remainder syrup to hard crack. Add to first mixture, beating constantly. Add vanilla. Drop by spoonfuls on foil.
This is a melt in your mouth divinity and makes a wonderful holiday treat. This recipe is named after the friend who shared it with me many decades ago.
