Grilled Chicken Fettuccine Recipe

1 c whipping cream
1/3 c butter
3/4 c grated Parnesan cheese
4 4-5 oz skinless, boneless chicken breast halves
12 pkg dried fettuccine
1/4 c Griller's Best Pesto ( recipe in Sauces) or purchased pesto
Dash pepper
Toasted pine nuts (optional)

1. In a small saucepan, heat whipping cream and butter till the butter melts. Gradually stir in Parmesan cheese and stir till combined. Cover and keep warm over low heat.

2. Rinse the chicken; pat dry. Place the chicken on the rack of an uncovered grill directly over medium heat. Grill the chicken for 12-15 minutes or till tender and no longer pink, turning once when it's halfway through. Remove from grill.

3. Meanwhile, cook the dried fettuccine according to package directions. Drain the pasta and keep warm.

4. Cut the chicken breasts into bite-size pieces. In a bowl, toss chicken with 1 T of pesto sauce.

5. Add the remaining 3T pesto and the warm Parmesan sauce to the hot, cooked fettuccine. Toss the pasta to coat. Arrange the fettuccine on a platter; season with salt and pepper. Top with grilled chicken and garnish with some pine nuts, if you like.
