4-5 Lb pork butt
1 Tbsp of garlic salt
4-5 cloves of garlic
pepper to taste
3 Tbs of Butter
1 Large onion peeled and sliced thin
2 Large cans of sauerkraut rinsed and drained
4-5 apples peeled cored and sliced thin

Preheat oven to 375º

Make small slits in the roast and insert the garlic cloves to flavor meat. Rub the entire roast with garlic salt and pepper. Place the sliced onion on the bottom of a heavy roaster, and place the seasoned pork roast on top of the onions. Place in oven for 30 minutes. Reduce the heat to 325º and continue to roast until pork is about done and onions are caramelized. Remove the roast from the pan and add the butter, Sauerkraut, and Apples and mix with the onions. Return the roast to the pan and put it back in the oven and continue to cook until roast is tender and kraut and apples are done. Slice the pork roast and serve the kraut and apples on the side.
