Mom's Carrot Cake Recipe

2 cups of all purpose flour
2 tsp pf baking soda
1/2 tsp of salt
2 tsp cinnamon
1 31/2 oz can of flaked coconut
3 eggs beaten
3/4 cup of vegetable oil
2 cups of sugar
3/4 cup of buttermilk
2 tsp of vanilla
1 8 oz can of crushed pineapple
2 cups of grated carrots
1 cup of chopped walnuts





Buttermilk Glaze

1 cup of sugar
1/2 tsp of baking soda
1/2 cup of buttermilk
1 Tsp of corn syrup
1 tsp of vanilla





Orange Cream Cheese Frosting

1/2 cup of butter
1- 8 oz. pkg of cream cheese
1 tsp of vanilla
2 cups of powdered sugar
1 tsp of orange zest
1 tsp of orange juice

Preheat oven to 350º
Sift the dry ingredients together and set aside. Combined the buttermilk, oil, eggs, vanilla and sugar in a large bowl. slowly add the dry ingredients and beat until smooth. Add the pineapple, carrots, and coconut, and mix well. Fold in the chopped nuts. pour into tree round cake pans that have been greased and floured. Bake for about 35-40 minutes, or until they test done. Remove from oven and spread buttermilk glaze on to the hot cakes. Cool in pans for about 15 minutes and then remove from pans and completely cool cakes before frosting them. Chill in the refrigerator.




Buttermilk glaze

Add the above ingredients for the glaze all but the vanilla bring to a boil and cook for 4 minutes. Remove from heat and add the vanilla. Makes 1 1/2 cups




Orange Cream Cheese Frosting

Cream the butter and cream cheese until fluffy and light.
Add the juice and zest and mix well add the powdered sugar and beat until light and smooth. Frost the cake with this icing.
