1 c. all-purpose flour
3/4 c. buttermilk
1/4 c. whole milk
1 tsp. sugar
1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1 large egg
2 T. unsalted butter, melted
Vegetable oil for cooking

Directions:

Melt butter in microwave. Add buttermilk and milk to the butter and warm up in the microwave (we use the Warm function on our microwave for about 5 - 10 minutes). Meanwhile, mix dry ingredients. Beat egg in a little dish, then pour into the butter/milk mixture. Pour this liquid mixture into the dry ingredients and stir lightly. It's OK if there are small lumps or streaks. Heat 2 tsp. vegetable oil in a 10-in. skillet over high heat. When hot, wipe away excess oil. Reduce heat to medium-high. Add 1/4 c. batter for each pancake, or as much as you'd like depending on the desired size of the pancake. Cook until there are bubbles at the edges. Turn with a spatula and cook the other side. Serve with real maple syrup.
