1 lb. pecan halves
1 egg white
1 tsp. water
1/2 c. sugar
1/2 tsp. salt
1 tsp. cinnamon

Butter a 15" jellyroll pan. Preheat over to 225º. Mix sugar, cinnamon and salt in small mixing bowl and set aside. In a large container with a lid, beat the egg white and water until somewhat frothy. Add pecans. Cover securely and shake to
coat pecans evenly. Open and sprinkle the sugar mixture over the pecans. Again, cover and shake to coat evenly.

Pour coated pecans onto buttered jellyroll pan. Separate any that are stuck together. Bake at 225º for 1 hour, stirring every 15 minutes. Cool completely before serving or storing.
