This is a hearty supper soup that is great in cold weather. With a food processor, this is a quick assembly job. This will serve six people.

1 c. shredded carrots
1 c. thinly sliced celery
1 c. thinly sliced onion
2 (14 oz.) cans of chicken broth
1/3 c. flour
3 c. milk
3/4 lb. natural sharp Cheddar, shredded
1/4 c. dry sherry (optional)

Directions:
Directions:
In a 3 quart soup pot, stir vegetables and chicken broth together, cover and simmer 10-12 minutes until veggies are tender. Blend flour with 1 c. of cold milk (use a whisk to be sure there are no lumps of flour), and add to vegetable mixture, stirring well. Add remaining milk and cook until thickened, about 15 minutes. Add cheese and stir until melted. Add sherry, and season to taste (a little season salt and black pepper are good). Serve
with good French bread and a green salad for a light supper. A glass of wine and an apple to finish are excellent!
