5 lbs of lean ground beef
5 Tsp of Morton's tender quick
2 1/2 tsp of coarse salt
1 tsp of liquid smoke
2/12 tsp of garlic powder or salt
2 1/2 tsp of whole pepper corns
or 1 1/2 tsp of coarse ground green or black pepper
2 1/2 tsp of whole mustard seed
1/2 tsp of red pepper
1 tsp of garlic flakes

In a large bowl mix the above ingredients very well making sure that everything is incorporated. Cover and refrigerate for 24 hours. Mix well and refrigerate again for 24 more hours. Remove from refrigerator and make small roll about 2-3 inches in diameter and 8-10 inches long and place on a broiler rack. Bake for 2-3 hours at 275º. Cool and wrap in foil. They can be frozen until ready to use.
