1 #2 can of pineapple chunks
1 # 2 can of pears (drained)
1 #2 can of sliced peaches (drained)
1 small can of mandarin oranges
1 orange
1 lemon
3/4 cup of sugar
4 Tsp of cornstarch
3-4 bananas

Directions:
Directions:
Drain the canned fruit and reserve the juice. (all but the mandarin oranges) Dice the pears and peaches and place them in a large bowl with the drained mandarin oranges. Zest and juice the lemon and orange and reserve. Combined the fresh juices and juice drained from the canned fruit in a sauce pan. Add the sugar, cornstarch and zest and cook over medium heat, stirring constantly, until mixture thickens. Remove from heat and cool in the refrigerator until completely chilled. When mixture is chilled add to the prepared fruit,(Do not add bananas until right before you serve this salad) cover and refrigerate for at least 2 hours. It is even better if you make it the day before.
