Combine in saucepan:
1/4 c sugar
1 egg
2 T cornstarch
1/4 tsp salt
Using portable mixer, beat in gradually:
2 c milk
Cook over low heat, beating until mixture boils.
Beat and boil one minute.
Add:
1 T butter
1 tsp vanilla
Beat until well blended.
Chill

Very important to stay with this custard while on stove to maintain smoothness.

When we had a milk cow, custards and puddings were prepared often in the Smith Kitchen to keep up with milk production. We didn't mind
because the family could really put these treats away. We continued to request custards and puddings long after the cow was gone.
