2 cups of sugar
1 cup of oil
3 large eggs
2 medium zucchini grated
1 Tbsp vanilla
3 cups of flour
1 Tbsp of cinnamon
1 tsp of salt
1 tsp of baking soda
1 tsp of baking powder
1 cup of raisins
1/3 cup of chopped nuts

Directions:
Directions:
Preheat oven to 350º In a large bowl cream the sugar and oil together, add the eggs one at a time and continuing to cream the mixture. Add the zucchini and vanilla and mix well. Sift the dry ingredients and add to the batter. Fold in the raisins and nuts. Pour into greased and floured loaf pans and bake for 1 hour.
