1 3-4 pound whole frying chicken
1 tsp of garlic salt
1 Tbsp of minced garlic
1 tsp of pepper
1/2 medium onion thinly sliced
2 cups of cream

Directions:
Directions:
Preheat oven to 375º Wash and dry the chicken. Spray a heavy roaster with a non-stick spray. (Mom used a cast iron roaster.) Rub the inside cavity of the chicken with the minced garlic. Rub the outside of the chicken with the garlic salt and pepper. Place the thin sliced onions in the bottom of the roaster and place the prepared chicken on top of the onions. Place the chicken in the hot oven and roast for about 20 minutes per pound. The chicken should be golden brown and the onions will caramelize on the bottom of the roaster. Remove the chicken to a hot platter and skim the excess fat from the pan drippings. Add the cream to the drippings and heat to a boil to deglaze the pan. Serve this sauce with the chicken.
