My sister Margaret Lewis gave me this recipe when I was first married, and it quickly became a family favorite. In fact, my children would request it for their birthday dinners.

1 8 oz. package elbow macaroni
2 c. shredded sharp Cheddar cheese
1 tsp. salt
1/4 tsp. pepper
1/8 tsp. oregano, crumbled
1 2/3 c. (1 tall can) evaporated milk
2 tbsp. grated Parmesan and Romano cheese

Preheat oven to 350º. Cook the macaroni and drain. Place half of the macaroni in a buttered 2-quart casserole. Cover the macaroni with half of the Cheddar cheese. Mix together the salt, pepper, and oregano. Sprinkle half over the cheese. Pour about half of the evaporated milk over the cheese. Repeat for the next layer. Sprinkle Parmesan cheese on top. Bake for 20 minutes. Put more grated cheese on top and let it melt. Return to the oven and bake another 10 minutes, or until cheese and milk have cooked to sauce consistency. Makes 6 servings.
