1 pkg. (8 oz) Bakers Sweet or Semi-sweet chocolate
1 stick butter
3/4 c. super fine sugar
5 eggs (separated)
3/4 c. ground almonds (I grind mine in my coffee grinder)
1/2 c. flour mixed with 1/2 tsp. baking powder
Raspberry jam
Chocolate icing

Directions:
Directions:
Melt chocolate over low heat, stir until blended.
Cream chocolate with butter, sugar and egg yolks.
Beat well, then fold in almonds and mix in flour & baking powder. Fold in stiffly beaten egg whites. Put into greased and floured single 8” cake pan. Bake at 350˚ until firm (about 45 minutes). When cake is cooled, split in half into 2 layers and sandwich with raspberry jam.
Top with your favorite chocolate icing recipe. If edges brown too quickly, put strips of foil around pan.

Chocolate Glaze

Melt 2 oz. unsweetened chocolate and 3 tbsp. butter over low heat. Remove from heat, stir in 1 cup confectioner’s sugar and 3/4 tsp. vanilla. Mix in about 2 tbsp. hot water, 1 tsp. at a time, stirring well until glaze is of proper consistency. Drizzle over cake.
