2 c all-purpose flour
3 t baking powder
1 t baking soda
1 t salt
2 c buttermilk
4 eggs separted
1 c melted butter (for waffles only)

Directions:
Directions:
Start heating waffle iron or pancake griddle as manufacturer directs.

Beat egg whites until stiff. In separate bowl mix dry ingredients. Add buttermilk and egg yolks, beat with mixer until blended. (For waffles, stir in melted butter at this time) Gently fold in egg whites. Either scoop batter onto griddle for pancakes or onto waffle iron for waffles.

We have used & shared this recipe for 35 years and is still the family favorite. Fresh blue berries, chopped nuts or chopped bananas can also be added for those who like the extra touch.
