4 halibut steaks, about 6 oz. each, thawed
2 T. butter, melted
Salt and pepper
Thyme leaves
2 1/4 c. shredded carrots
2 1/4 c. finely chopped fresh broccoli
1/2 c. finely chopped onion
1/2 c. chopped pecans
1/4 c. grated parmesan cheese
1/4 c. water
2 T. butter

Line fire bowl of a covered grill with heavy duty foil. Puncture foil at grill vent openings.
Tear off 4 14x14" sheets of heavy duty foil. Place one halibut steak in center of each foil sheet. Brush both sides of halibut with 2 T. melted butter. Sprinkle with salt, pepper and thyme. Combine carrots, broccoli, onion, pecans, parmesan cheese, water and 2 T. butter. Place 1 c. vegetable mixture in a circle around each halibut steak.
To wrap, bring longer sides of foil together over food. Fold down loosely in crimped folds, allowing space for heat circulation and expansion. Fold up short ends; crimp to seal. Grill foil packets over medium-hot, direct heat in covered grill until halibut flakes easily when tested with a fork; allow 10 minutes cooking time per inch of thickness of halibut measured at its thickest part.
