3 pounds ripe tomatoes
1 green pepper
2 large onions
1/2 c sugar
1 1/2 c white vinegar
1 tsp salt
1 tsp nutmeg
1/2 tsp mustard seed
1/2 tsp cinnamon
1 tsp allspice
1/4 tsp cloves

Dip ripe tomatoes, one by one, briefly into a pot of boiling water to loosen skins, peel and remove core. Chop tomatoes and combine in saucepan with chopped green pepper and onion. Cook, stirring occasionally, until vegetables are tender, about 20 minutes. Add sugar, vinegar, salt, nutmeg, mustard seed, cinnamon, allspice, and cloves and continue cooking for 20 minutes, stirring occasionally. Spoon boiling hot chili sauce into hot sterilized pint jars, leaving 1/4 inch head space. Wipe edge of jar clean with damp cloth. Close jars. Process in boiling water 15 minutes.
