1 1/2 c. sugar
Scant 1/2 c. cornstarch (6 T. or so)
1/4 tsp. salt
2 1/2 c. water
4 eggs, separated
3 T. butter
1 T grated lemon rind (or more to taste)
1/2 c. lemon juice
Meringue:
4 egg white (separated above)
1/4 tsp. cream of tartar
1/2 c. sugar

Directions:
Directions:
Combine sugar, cornstarch and salt in large saucepan. Gradually add water, stirring with wooden spoon. Cook over medium heat, stirring constantly until thick and bubbly. Cool 1 minute and remove from heat. Beat egg yolks slightly in small bowl. Slowly blend 1/2 c. hot mixture into eggs. Stir back into remaining mixture in pan. Cook on low 2 minutes. Remove from heat (don't overcook). Stir in butter, lemon rind and juice. Pour into cooled crust.

Serve with meringue or whipped cream.
