5 lbs alligator tail meat
Lemon juice
2 c fish fry
1 c flour
1 tsp baking powder
2 tsp salt
2 tbsp cayenne
oil

Directions:
Directions:
Cut the alligator meat into thin pieces removing all white, fatty tissue. In a bowl cover the meat with lemon juice and soak for 30 minutes. In a shallow bowl combine the dry ingredients. Coat the meat with the dry ingredients and deep fry until a golden brown. Serves: 12 Prep: 45 min.
