The peanuts add a congenial taste and nice crunch to the meat
1/4 cup cracker crumbs
1/2 cup dry roasted peanuts
1/2 cup or more of heavy cream
2 tbsp. butter, melted
2 tsp. grated onion
Pinch of cayenne pepper
1 wild duck (make sure he 's not wild anymore)
salt
freshly ground pepper
2 slices salt pork

Directions:
Directions:
Combine the crumbs, peanuts, cream, butter, grated onion, and cayenne. If stuffing seems a little dry add a little more cream. Preheat oven to 450º. Rinse duck inside and out really well with cold water, dry throughly. Stuff and skewer shut; then truss by winding twine twice around one leg, leave slack, then wind around the other leg. Place duck breast up in shallow pan, sprinkle with salt and pepper to taste; cover the breast with salt pork. Roast for 20 to 30 minutes, basting every 5 minutes with melted fat. Serves: 2 Prep: 30 min.
