1/4 lb. of butter
2 guinea hens quartered
fresh ground pepper
12 small white onions
1 1/2 cups heavy cream
2 tbsp, lemon juice
2 tbsp. cranberry jelly

Directions:
Directions:
Melt the butter in a large skillet over medium heat.
Lightly brown the hens inthe butter. Sprinkle them
with salt and pepper to taste. Remove from the pan
and set aside. Brown the onions in fat in pan.
Return guinea hens to pan and pour cream over
them. Cover and simmer for forty minutes, basting
with cream every 10 minutes. When done remove
the hens to a warm serving plate. Add lemon juice
and cranberry jelly to the cream and pan drippings
then simmer for 2 to 3 minutes. Spoon over the
guinea hens before serving.
