2 young Guinea hens

freshly ground pepper
1/4 lb of salt pork in thin sheets (Because Guinea hen is naturally dry, it should be covered with larding fat during roasting)

Directions:
Directions:
Preheat oven to 350º. Rub the hen liberally inside and out with salt and pepper. Place them on a rack in a shallow roasting pan and lay sheets of salt pork over the breasts. Roast for 45 to 60 minutes.
