1/2 lb. of broad or green noodles
3/4 cup freshly grated parmesam cheese
2 tbsp. butter
2 tbsp. flour
1 cup of heavy cream 1 cup chicken broth
2 cups cubed cooked chicken or turkey
2 egg yolks lightly beaten
salt.

Preheat oven to 375*. Butter a 2 quart baking dish.
Cook noodles until just done. Drain and while they are still hot stir in all but 2 tbsp. of cheese. Melt the butter in a sauce pan, add flour and cook for two to three minutes Gradually stir in cream and broth. Cook at low heat, stirring often, for 5 minutes. Add the chicken or turkey and cook another minute. Beat 1/4 cup of the hot sauce into the egg yolks, then return the yolk sauce mixture to the chicken mixture. Stir briskly for 1 minute, remove from heat add salt to taste. Place the chicken mixture over the noodles. Sprinkle last 2 tbsp. cheese over over mixture and bake 20 to 30 minutes or until golden brown .
