5 eggs at room temperature
3 C sifted flour

Make a well in the flour for the PRE-WHISKED eggs. Knead the dough and let it rest for about 30 minutes. Knead again and let it rest again...at least 1 hour before rolling. Roll out and and feed through a pasta machine.

This was shown to Terry and Susie & Me by Aunt Julia Granato. Very heavy dough...but good. The secret to pasta is in the kneading to incorporate all of the liquid throughout. Remember to "fold and turn---then repeat..adding a little flour dust as you go". This is a skill, I think!
