Cookie Dough-
1 c butter
1 c granulated sugar
1 c brown sugar
3 eggs
4 c flour
1 tsp. soda
1 tsp. cinnamon
salt

Filling-
1 lb. seeded dates - chopped.
1/2 c sugar
1/2 c water
1 c chopped nuts

Directions:

Cookie Dough -
Mix in order given.
Roll out to 1/2 inch thick.
Spread with filling and roll.
Store in cool place until chillled.
Slice and bake @ 350 degrees for 10-12 min.

Filling -
Cook until a thick paste.
Add 1 c chopped nuts.
Cool filling.

This recipe, given to me by Aunt Louise, is very similar to "Grandma Allspach's Overnight Cookies." This brown sugar cookie recipe can be made with or without the filling. The dough can be shaped in a roll and kept overnight. This is a must over the holidays. They are fun to make and the results are rewarding.
