to 1/3 c. lime juice
c. olive oil
1 garlic clove, minced
2 (15 oz.) cans black beans, drained
1 c. corn (frozen is better)
1 avocado, peeled, pitted, & diced
1 red bell pepper, chopped
2 tomatoes, chopped
6 green onions, sliced thin
salt to taste
c. cilantro (optional)
1/8 tsp. cayenne pepper

Place lime juice, oil, garlic, salt, cayenne pepper, in a small covered container and shake until blended. In a salad bowl, combine remaining ingredients. Stir in dressing. Chill and serve.
