2 lb. salmon fillets or steaks
2 tbsp. olive oil
1 large onion, sliced
Marinade:
1 c. water
1 c. white vinegar
1/2 c. balsamic vinegar
1/2 c. white sugar
3 tbsp. pickling spices
1/4 c. ketchup
1/2 c. V-8
1 tsp. salt

Directions:
Directions:
Combine all the marinade ingredients in a large microwave safe bowl or pan. Cook on high for about 10 minutes, stirring at least twice during cooking. Cover and set aside.

In a large skillet, heat the olive oil and gently brown the fillets or steaks. Transfer browned pieces into marinade. When all pieces are in the marinade, add onion slices. Salmon and onions should be completely covered with liquid. Let cool, cover and refrigerate for 3-4 days. Serve chilled.
