7-8 bell peppers, halved lengthwise and seeded
3 lb ground beef
1 egg per pound of meat (3 eggs)
1/2 cup bread crumbs
2 cups cooked & cooled rice
1 medium onion, chopped fine
1/2 tsp. garlic powder or can use fresh garlic
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. grated romano or parmesan cheese
2-3 tbsp. fresh parsley, chopped
4 to 5 (15oz) cans tomato sauce or can use Tomato Sauce recipe. (see recipe index)

Clean peppers and cut in half. Microwave peppers for 3-4 min to soften. Set aside. Microwave chopped onion to make soft for 2-3 min.
Mix well in large bowl: ground beef, bread crumbs, eggs, rice, onion, garlic, salt, pepper, cheese, parsley and 2 to 3 15oz cans of tomato sauce, you can add more or less tomato sauce depending on consistency of mixture. Mix until moist.
Fill pepper halves with meat mixture. You can fill these very generously. Place filled pepper halves in baking dish or pan. For this recipe you will probably use 2 pans. Pour 2 cans of tomato sauce over filled peppers (can use Tomato Sauce recipe-see recipe index).
Bake at 350º uncovered for 1 hour. Serves 8-10.
