1/2 c butter
1 c sugar
2 eggs
1 c whole wheat flour
1 c white flour
1 tsp baking soda
1/4 tsp salt
1 c mashed banana (2 or 3 ripe)
1 tsp vanilla
1/2 chopped pecans or walnuts

Directions:
Directions:
Cream butter and sugar until fluffy. Add eggs and vanilla, beating well. Gradually add dry ingredients alternating with banana mixture. Stir in nuts. Spread into 9x5x3 inch greased bread pan. Bake 350º for approximately 1 hour or until center is firm.

Cool 5 minutes in pan, then turn out on rack to complete cooling. Freezes well.

Variations

1 c blueberries can be gently stirred into batter.

For multi-grain add 1/4 oatmeal in place of 1/4 c whole wheat flour.
