1 pound of rigatoni or similar type of pasta
3-4 T Olive Oil
1 pinch of red chile flakes
1- 1/2 lb Italian Sausage, casings removed and crumbled.
2 T balsamic vinegar
4 garlic cloves thinly sliced
1 c diced fresh Roma tomatoes
4 bunches of arugula,washed stems removed and coarsely chopped
1 c grated cheese

Directions:

Cook rigatoni according to package directions.
In a large skillet heat the olive oil on medium for 5 minutes. Add the chile flakes and sausage and cook until nicely browned.Add the vinegar and scrape the bits off bottom of pan. Add the garlic and tomatoes and cook for about 4 minutes. Be careful not to brown the garlic.
When pasts is done, save 1/2 c of cooking water from the pasta pot. Drain the pasta and add to skillet along with reserved 1/2 c of pasta water. Add the arugula and cook 4-5 minutes until liquid is mostly absorbed. Sprinkle with cheese and serve immediately.

Can substitute 1 14 oz can tomatoes, drained and chopped for fresh tomatoes.
